Mozzarella Salad

Nothing difficult about this one.  Just buy some fresh Mozzarella from your local Italian or specialty store,
Cut up some garden tomatoes, onions, and some fresh basil leaves, season with cracked pepper, sea salt and a touch of oregano.
Sprinkle with Virgin Olive Oil and Balsamic or Red Wine Vinegar. 
Then add some fresh Italian bread, a little vino and man... you've got yourself a great summer meal.  Find a friend to hang with for a couple of hours while you talk about whatever.  It doesn't get much better than this!



Summer Spaghetti

Summer SpaghettiOK, so it's not summer any more. No Kidding! But you can still enjoy this dish. It's one of my favorites, and simple to make.

Here's what you need to serve 2:

  • 1lb spaghetti
  • 2 or 3 tomatoes
  • 1 green pepper
  • 1 small onion
  • 3 tablespoons crushed garlic
  • basil leaves (to taste)
  • 1 can black olives
  • 1 small bottle green olives with pimentos
  • 1/8 cup capers
  • olive oil

Cut up tomatoes into small wedges, chop pepper, onions, basil leaves and olives. Place in a large salad bowl along with crushed garlic, and capers. Add 1/3 cup Olive Oil, (NO VINEGAR), and mix contents. Place in refrigerator for at least 3 to 4 hours to allow to marinate. Cook spaghetti and drain as you normally would. Serve plain spaghetti with marinated contents poured on top. Add grated cheese if you like. A little Italian bread on the side, and ooh boy!
